I love a good potluck. Nothing bad can be said about tables crammed full of creamy hot dishes, pies, and all of the delightfully comforting home-baked goodness...except maybe that you might leave said potluck on the verge of cardiac arrest, or in my case, with a colossal allergic reaction to all of the wheat you just ingested about to rear it's ugly head. In an effort to attend one of such potlucks, I decided to experiment with a few recipes that might allow my to bring a dish to contribute that I could actually eat. Given my love for all things breakfast, naturally, I began my experimentation with just that.

Preheat oven to 350°. Butter bottom & sides of baking dish. Dice tomatoes and sautee in olive oil for roughly 5 minutes, until they are tender and slightly cooked. Set aside. Cook bacon, sausage and chop into pieces. Combine bacon, sausage, tomatoes, and cooked spinach in a bowl. Beat eggs and add salt, pepper, rosemary, and oregano to taste. Combine meat and vegetable mixture with egg mixture. Crumble your goat cheese into the bowl, and add your shredded cheese. Combine and pour into baking dish. Bake roughly 15 minutes, until mixture is firm. Remove from onion and let set for about 5 minutes. Serve. EAT.

8-10 small tomatoes
1 package spinach, cooked and chopped
1/4 cup goat's cheese
1/4 cup pepper jack cheese, shreddedDirections
