Garden Fresh Greek Tomatoes



Fresh local produce, especially in the summer time, is something to be savored. Growing up in California, I was unknowingly spoiled by the abundance of local offerings and year-round farmers markets–things my out-of-state friends like to remind me are not universally common. Though my affection for fresh produce of the tomato-kind has been a more recent development, I thought I'd take this chance to celebrate the savory, red fruit as we end it's glorious season. Garden Fresh Greek Tomatoes are another family favorite, and the perfect side dish, salad, appetizer, and meal in-and-of-itself.


Ingredients
4-5 fresh tomatoes
1/2 purple onion
1/2 cup feta cheese
1/4 cup your favorite Italian dressing

Directions
Slice the tomatoes into rounds and then quarters. Do the same with the onion, cutting down any large chunks, so they are roughly equal in size to the tomatoes. Combine tomatoes, onion, and feta in a bowl. Drizzle the Italian dressing around the tomatoes. Garnish with a few crumbles of feta on top. EAT.

Tip: We like to use Newman's Own brand Italian dressing, because it's delicious and fast, but try making your own with olive oil, balsamic vinegar, and your favorite Italian herbs.
