Lunch Today: Bento Salads!



I made my husband and I Bento boxes for lunch today. We've just completed our HUGE January YBF Dinner (photos coming soon) and we're back to eating healthy. So I thought I'd share my first Bento attempt. 

What's inside:
On the right is a simple salad with Butter Lettuce, Taiwanese Lettuce (A Choy), Pea Sprouts, Sugar Snap Peas, and Dried Cranberries. The green pod has a simple potato carrot salad. I boiled the potatoes and carrots for something else so I had a few left over. I tossed them with maple syrup, apricot vinegar and a little olive oil plus some finely chopped onion and some more pea shoots. The container below the pod has some chopped up fragrant pear sitting on top of some miso salda dressing from whole foods. Next to it is a lemon wedge that you can barely see and above that is a little star filled with diced, seeded and drained tomatoes mixed with garlic, chinese chives and some olive oil. Above that is half a hard boiled egg sliced thin. The intention was to eat the egg and potato salad together and then mix everything else. Which I know isn't traditional bento - but whatever....It's my first time.


I also ate an orange. Well actually, I ate three. And then the little bag of tea is from Jeffrey, one of my co-workers, who brought it back for me from Indonesia.
